Ingredients
- 4 large boneless skinless chicken breasts
- 4 oz cream cheese, softened
- 1/2 cup frozen spinach, thawed and drained
- 1/2 cup artichoke hearts, chopped
- 1/4 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1/4 cup mozzarella cheese, shredded
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- 1 Preheat oven to 400°F (200°C).
- 2 Mix cream cheese, spinach, artichokes, parmesan, and garlic for the filling.
- 3 Cut a pocket horizontally in each chicken breast.
- 4 Stuff each pocket with the spinach artichoke mixture.
- 5 Secure with toothpicks if needed. Season with Italian seasoning, salt, and pepper.
- 6 Heat olive oil in an oven-safe skillet. Sear chicken 3 minutes per side.
- 7 Top with mozzarella and transfer to oven.
- 8 Bake 20-25 minutes until chicken reaches 165°F.
