Ingredients

  • 4 large boneless skinless chicken breasts
  • 4 oz cream cheese, softened
  • 1/2 cup frozen spinach, thawed and drained
  • 1/2 cup artichoke hearts, chopped
  • 1/4 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/4 cup mozzarella cheese, shredded
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. 1 Preheat oven to 400°F (200°C).
  2. 2 Mix cream cheese, spinach, artichokes, parmesan, and garlic for the filling.
  3. 3 Cut a pocket horizontally in each chicken breast.
  4. 4 Stuff each pocket with the spinach artichoke mixture.
  5. 5 Secure with toothpicks if needed. Season with Italian seasoning, salt, and pepper.
  6. 6 Heat olive oil in an oven-safe skillet. Sear chicken 3 minutes per side.
  7. 7 Top with mozzarella and transfer to oven.
