Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 large head cauliflower, riced
  • 4 tbsp butter, divided
  • 1/2 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 4 slices bacon, chopped
  • 2 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • Fresh parsley, chopped

Instructions

  1. 1 Cook bacon in a skillet until crispy. Remove and set aside, keeping drippings.
  2. 2 Season shrimp with Cajun seasoning.
  3. 3 In bacon drippings, cook shrimp 2-3 minutes per side. Remove and set aside.
  4. 4 For grits: Steam riced cauliflower until tender, about 5 minutes.
  5. 5 Add 2 tbsp butter, heavy cream, and cheddar to cauliflower. Stir until creamy.
  6. 6 Season grits with salt and pepper.
  7. 7 Add remaining butter and garlic to the shrimp pan. Sauté 1 minute.
  8. 8 Add chicken broth and scrape up any browned bits.
  9. 9 Serve shrimp over cauliflower grits, topped with bacon and parsley.
