Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 large head cauliflower, riced
- 4 tbsp butter, divided
- 1/2 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 4 slices bacon, chopped
- 2 tbsp Cajun seasoning
- 3 cloves garlic, minced
- 1/4 cup chicken broth
- Fresh parsley, chopped
Instructions
- 1 Cook bacon in a skillet until crispy. Remove and set aside, keeping drippings.
- 2 Season shrimp with Cajun seasoning.
- 3 In bacon drippings, cook shrimp 2-3 minutes per side. Remove and set aside.
- 4 For grits: Steam riced cauliflower until tender, about 5 minutes.
- 5 Add 2 tbsp butter, heavy cream, and cheddar to cauliflower. Stir until creamy.
- 6 Season grits with salt and pepper.
- 7 Add remaining butter and garlic to the shrimp pan. Sauté 1 minute.
- 8 Add chicken broth and scrape up any browned bits.
- 9 Serve shrimp over cauliflower grits, topped with bacon and parsley.
