Ingredients

  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 4 tbsp butter
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 1/2 tsp mustard powder
  • 6 strips bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. 1 Melt butter in a large pot over medium heat. Sauté onion until soft, about 5 minutes.
  2. 2 Add garlic and cook 1 minute more.
  3. 3 Add broccoli and chicken broth. Bring to a boil, then reduce heat and simmer 15 minutes.
  4. 4 Use an immersion blender to partially blend, leaving some chunks.
  5. 5 Stir in heavy cream and mustard powder.
  6. 6 Reduce heat to low and gradually add cheese, stirring until melted.
  7. 7 Season with salt and pepper.
