Ingredients
- 4 cups broccoli florets
- 4 cups chicken broth
- 2 cups sharp cheddar cheese, shredded
- 1 cup heavy cream
- 4 tbsp butter
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1/2 tsp mustard powder
- 6 strips bacon, cooked and crumbled
- Salt and pepper to taste
Instructions
- 1 Melt butter in a large pot over medium heat. Sauté onion until soft, about 5 minutes.
- 2 Add garlic and cook 1 minute more.
- 3 Add broccoli and chicken broth. Bring to a boil, then reduce heat and simmer 15 minutes.
- 4 Use an immersion blender to partially blend, leaving some chunks.
- 5 Stir in heavy cream and mustard powder.
- 6 Reduce heat to low and gradually add cheese, stirring until melted.
- 7 Season with salt and pepper.
- 8 Serve topped with crumbled bacon and extra cheese.
