Ingredients

  • 1.5 lbs ground lamb
  • 1 large head cauliflower, cut into florets
  • 4 tbsp butter, divided
  • 1/2 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 onion, diced
  • 2 carrots, diced small
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme leaves

Instructions

  1. 1 Steam cauliflower until very tender. Drain well.
  2. 2 Mash cauliflower with 2 tbsp butter, cream, and half the cheese. Set aside.
  3. 3 Brown lamb in a skillet. Remove and drain fat.
  4. 4 Sauté onion and carrots in remaining butter until soft.
  5. 5 Add garlic, tomato paste, rosemary, and thyme. Cook 1 minute.
  6. 6 Return lamb to pan. Add broth and simmer until thickened.
  7. 7 Spread lamb mixture in a baking dish. Top with cauliflower mash.
  8. 8 Sprinkle with remaining cheese. Broil until golden.
