Ingredients
- 1.5 lbs ground lamb
- 1 large head cauliflower, cut into florets
- 4 tbsp butter, divided
- 1/2 cup heavy cream
- 1 cup cheddar cheese, shredded
- 1 onion, diced
- 2 carrots, diced small
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme leaves
Instructions
- 1 Steam cauliflower until very tender. Drain well.
- 2 Mash cauliflower with 2 tbsp butter, cream, and half the cheese. Set aside.
- 3 Brown lamb in a skillet. Remove and drain fat.
- 4 Sauté onion and carrots in remaining butter until soft.
- 5 Add garlic, tomato paste, rosemary, and thyme. Cook 1 minute.
- 6 Return lamb to pan. Add broth and simmer until thickened.
- 7 Spread lamb mixture in a baking dish. Top with cauliflower mash.
- 8 Sprinkle with remaining cheese. Broil until golden.
