Ingredients
- 1 cup natural peanut butter (no sugar added)
- 1/2 cup erythritol or monk fruit sweetener
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- Pinch of salt
Instructions
- 1 Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
- 2 Mix peanut butter and sweetener until combined.
- 3 Add egg, vanilla, baking soda, and salt. Mix well.
- 4 Roll dough into 12 balls. Place on baking sheet.
- 5 Flatten with a fork in a criss-cross pattern.
- 6 Bake 10-12 minutes until edges are set.
- 7 Cool on baking sheet 5 minutes before transferring to a rack.
