Ingredients

  • 3 cans (6.5 oz each) chopped clams, drained (reserve juice)
  • 2 cups cauliflower, diced small
  • 6 strips bacon, chopped
  • 1 medium onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup clam juice (from cans plus bottled if needed)
  • 2 tbsp butter
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. 1 Cook bacon in a large pot until crispy. Remove and set aside.
  2. 2 Add butter to bacon fat. Sauté onion and celery until soft.
  3. 3 Add garlic and thyme. Cook 1 minute.
  4. 4 Add cauliflower and clam juice. Simmer 15 minutes until cauliflower is tender.
  5. 5 Stir in heavy cream and bring to a gentle simmer.
  6. 6 Add clams and cook 5 minutes. Don't boil.
  7. 7 Season with salt and pepper.
  8. 8 Serve topped with crumbled bacon.
