Ingredients
- 3 cans (6.5 oz each) chopped clams, drained (reserve juice)
- 2 cups cauliflower, diced small
- 6 strips bacon, chopped
- 1 medium onion, diced
- 3 stalks celery, diced
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup clam juice (from cans plus bottled if needed)
- 2 tbsp butter
- 1 tsp fresh thyme
- Salt and pepper to taste
Instructions
- 1 Cook bacon in a large pot until crispy. Remove and set aside.
- 2 Add butter to bacon fat. Sauté onion and celery until soft.
- 3 Add garlic and thyme. Cook 1 minute.
- 4 Add cauliflower and clam juice. Simmer 15 minutes until cauliflower is tender.
- 5 Stir in heavy cream and bring to a gentle simmer.
- 6 Add clams and cook 5 minutes. Don't boil.
- 7 Season with salt and pepper.
- 8 Serve topped with crumbled bacon.

- Don't boil after adding cream or clams
- Use fresh clams when in season for best flavor
