Ingredients
- 1.5 lbs ground beef
- 2 tbsp taco seasoning (sugar-free)
- 4 cups cauliflower rice
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup sour cream
- 1 cup Mexican cheese, shredded
- 1/4 cup fresh cilantro
- Lime wedges for serving
Instructions
- 1 Brown ground beef over medium-high heat. Drain excess fat.
- 2 Add taco seasoning and 1/4 cup water. Simmer until thickened.
- 3 Cook cauliflower rice according to package directions.
- 4 Divide cauliflower rice among 4 bowls.
- 5 Top with seasoned beef.
- 6 Add lettuce, tomatoes, avocado, cheese, and sour cream.
- 7 Garnish with cilantro and serve with lime wedges.
