Ingredients

  • 1.5 lbs ground beef
  • 2 tbsp taco seasoning (sugar-free)
  • 4 cups cauliflower rice
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1 cup Mexican cheese, shredded
  • 1/4 cup fresh cilantro
  • Lime wedges for serving

Instructions

  1. 1 Brown ground beef over medium-high heat. Drain excess fat.
  2. 2 Add taco seasoning and 1/4 cup water. Simmer until thickened.
  3. 3 Cook cauliflower rice according to package directions.
  4. 4 Divide cauliflower rice among 4 bowls.
  5. 5 Top with seasoned beef.
