Ingredients
- 2 racks of lamb (8 ribs each)
- 3 tbsp Dijon mustard
- 1/4 cup fresh parsley, minced
- 2 tbsp fresh rosemary, minced
- 2 tbsp fresh thyme, minced
- 4 cloves garlic, minced
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1 Preheat oven to 425°F (220°C).
- 2 Season lamb racks with salt and pepper.
- 3 Heat olive oil in an oven-safe skillet. Sear lamb on all sides.
- 4 Mix herbs and garlic together.
- 5 Brush mustard all over the lamb.
- 6 Press herb mixture onto the lamb.
- 7 Roast 20-25 minutes for medium-rare (130°F internal).
- 8 Rest 10 minutes before slicing between ribs.
