Ingredients

  • 2 racks of lamb (8 ribs each)
  • 3 tbsp Dijon mustard
  • 1/4 cup fresh parsley, minced
  • 2 tbsp fresh rosemary, minced
  • 2 tbsp fresh thyme, minced
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1 Preheat oven to 425°F (220°C).
  2. 2 Season lamb racks with salt and pepper.
  3. 3 Heat olive oil in an oven-safe skillet. Sear lamb on all sides.
  4. 4 Mix herbs and garlic together.
  5. 5 Brush mustard all over the lamb.
  6. 6 Press herb mixture onto the lamb.
  7. 7 Roast 20-25 minutes for medium-rare (130°F internal).
  8. 8 Rest 10 minutes before slicing between ribs.
