Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup parmesan cheese, grated
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. 1 Season chicken breasts with Italian seasoning, salt, and pepper.
  2. 2 Heat olive oil in a large skillet over medium-high heat.
  3. 3 Cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
  4. 4 In the same pan, sauté garlic for 30 seconds until fragrant.
  5. 5 Add heavy cream, chicken broth, and sun-dried tomatoes. Bring to a simmer.
