Ingredients
- 1.5 lbs mixed mushrooms, sliced
- 4 tbsp butter
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp fresh thyme leaves
- 1/4 cup dry sherry (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- 1 Melt butter in a large pot over medium-high heat.
- 2 Add mushrooms and cook without stirring for 5 minutes to brown.
- 3 Stir and continue cooking until golden, about 10 more minutes.
- 4 Add onion and cook until softened, 5 minutes.
- 5 Add garlic and thyme, cook 1 minute.
- 6 Pour in sherry if using and cook until evaporated.
- 7 Add broth and simmer 10 minutes.
- 8 Blend half the soup until smooth, return to pot.
- 9 Stir in cream and season with salt and pepper.
