Ingredients

  • 1.5 lbs mixed mushrooms, sliced
  • 4 tbsp butter
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp fresh thyme leaves
  • 1/4 cup dry sherry (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1 Melt butter in a large pot over medium-high heat.
  2. 2 Add mushrooms and cook without stirring for 5 minutes to brown.
  3. 3 Stir and continue cooking until golden, about 10 more minutes.
  4. 4 Add onion and cook until softened, 5 minutes.
  5. 5 Add garlic and thyme, cook 1 minute.
  6. 6 Pour in sherry if using and cook until evaporated.
  7. 7 Add broth and simmer 10 minutes.
  8. 8 Blend half the soup until smooth, return to pot.
  9. 9 Stir in cream and season with salt and pepper.
