Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 cups fresh spinach
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. 1 Season chicken with Italian seasoning, salt, and pepper.
  2. 2 Melt 2 tbsp butter in a skillet over medium-high heat.
  3. 3 Cook chicken 6-7 minutes per side until done. Remove and set aside.
  4. 4 Add remaining butter and garlic. Sauté 1 minute.
  5. 5 Pour in cream and broth. Bring to a simmer.
  6. 6 Add sun-dried tomatoes and parmesan. Stir until cheese melts.
  7. 7 Add spinach and cook until wilted.
  8. 8 Return chicken to pan. Spoon sauce over and serve.
