Ingredients
- 4 boneless skinless chicken breasts
- 3 tbsp butter, divided
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 cups fresh spinach
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup parmesan cheese, grated
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- 1 Season chicken with Italian seasoning, salt, and pepper.
- 2 Melt 2 tbsp butter in a skillet over medium-high heat.
- 3 Cook chicken 6-7 minutes per side until done. Remove and set aside.
- 4 Add remaining butter and garlic. Sauté 1 minute.
- 5 Pour in cream and broth. Bring to a simmer.
- 6 Add sun-dried tomatoes and parmesan. Stir until cheese melts.
- 7 Add spinach and cook until wilted.
- 8 Return chicken to pan. Spoon sauce over and serve.
