Ingredients

  • 1.5 lbs ground beef
  • 1 cup diced tomatoes with green chilies
  • 2 tbsp taco seasoning (sugar-free)
  • 1/2 cup sour cream
  • 1.5 cups Mexican cheese blend, shredded
  • 1/4 cup sliced black olives
  • 1 avocado, diced
  • 2 tbsp fresh cilantro, chopped
  • 1 jalapeño, sliced (optional)

Instructions

  1. 1 Brown ground beef in a large skillet over medium-high heat.
  2. 2 Drain excess fat if needed.
  3. 3 Add diced tomatoes and taco seasoning. Stir to combine.
  4. 4 Reduce heat to medium and stir in sour cream.
  5. 5 Top with shredded cheese and cover.
  6. 6 Cook 3-5 minutes until cheese is melted.
  7. 7 Top with olives, avocado, cilantro, and jalapeños.
  8. 8 Serve directly from the skillet.
