Ingredients

  • 1 large spaghetti squash
  • 1 cup sugar-free marinara sauce
  • 1.5 cups mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

  1. 1 Preheat oven to 400°F (200°C).
  2. 2 Cut squash in half lengthwise. Remove seeds.
  3. 3 Brush with olive oil, season with salt and pepper.
  4. 4 Place cut-side down on a baking sheet. Bake 40 minutes until tender.
  5. 5 Scrape squash into strands with a fork.
  6. 6 Mix squash with marinara, garlic, Italian seasoning, and half the mozzarella.
  7. 7 Return to squash shells. Top with remaining cheeses.
  8. 8 Bake 10 minutes until cheese is melted and bubbly.
  9. 9 Garnish with fresh basil.
