Ingredients
- 1 large spaghetti squash
- 1 cup sugar-free marinara sauce
- 1.5 cups mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Fresh basil for garnish
- Salt and pepper to taste
Instructions
- 1 Preheat oven to 400°F (200°C).
- 2 Cut squash in half lengthwise. Remove seeds.
- 3 Brush with olive oil, season with salt and pepper.
- 4 Place cut-side down on a baking sheet. Bake 40 minutes until tender.
- 5 Scrape squash into strands with a fork.
- 6 Mix squash with marinara, garlic, Italian seasoning, and half the mozzarella.
- 7 Return to squash shells. Top with remaining cheeses.
- 8 Bake 10 minutes until cheese is melted and bubbly.
- 9 Garnish with fresh basil.
