Ingredients
- 1 large head cauliflower, riced
- 3 eggs, beaten
- 4 strips bacon, chopped
- 1 cup mixed vegetables (peas, carrots substitute with peppers, bean sprouts)
- 4 green onions, sliced
- 3 tbsp coconut aminos
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
Instructions
- 1 Cook bacon in a large wok until crispy. Remove and set aside.
- 2 Scramble eggs in bacon fat, break into pieces, and remove.
- 3 Add sesame oil, garlic, and ginger. Sauté 30 seconds.
- 4 Add vegetables and cook 2-3 minutes.
- 5 Add riced cauliflower and stir-fry 5-7 minutes until tender.
- 6 Pour in coconut aminos and toss to coat.
- 7 Return bacon and eggs to wok. Add green onions.
- 8 Toss everything together and serve hot.

- Make sure cauliflower rice is dry to prevent sogginess
