Ingredients

  • 1 large head cauliflower, riced
  • 3 eggs, beaten
  • 4 strips bacon, chopped
  • 1 cup mixed vegetables (peas, carrots substitute with peppers, bean sprouts)
  • 4 green onions, sliced
  • 3 tbsp coconut aminos
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Instructions

  1. 1 Cook bacon in a large wok until crispy. Remove and set aside.
  2. 2 Scramble eggs in bacon fat, break into pieces, and remove.
  3. 3 Add sesame oil, garlic, and ginger. Sauté 30 seconds.
  4. 4 Add vegetables and cook 2-3 minutes.
  5. 5 Add riced cauliflower and stir-fry 5-7 minutes until tender.
  6. 6 Pour in coconut aminos and toss to coat.
  7. 7 Return bacon and eggs to wok. Add green onions.
  8. 8 Toss everything together and serve hot.
