Ingredients
- 3 cups cooked chicken, shredded
- 2 ripe avocados
- 2 tbsp lime juice
- 1/4 cup red onion, finely diced
- 1/4 cup cilantro, chopped
- 1 jalapeño, seeded and minced
- Salt and pepper to taste
- Lettuce cups for serving
Instructions
- 1 Mash avocados in a large bowl with lime juice.
- 2 Add shredded chicken and mix to combine.
- 3 Fold in red onion, cilantro, and jalapeño.
- 4 Season with salt and pepper to taste.
- 5 Serve in lettuce cups or over mixed greens.
- 6 Garnish with extra cilantro if desired.
