Ingredients

  • 3 cups cooked chicken, shredded
  • 2 ripe avocados
  • 2 tbsp lime juice
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Salt and pepper to taste
  • Lettuce cups for serving

Instructions

  1. 1 Mash avocados in a large bowl with lime juice.
  2. 2 Add shredded chicken and mix to combine.
  3. 3 Fold in red onion, cilantro, and jalapeño.
  4. 4 Season with salt and pepper to taste.
